One of the best parts of thanksgiving dinner is having enough leftovers for days. The annoying part is having the exact same thing for days. This is one way to use many leftovers up at one time:
Turkey bones (I only used the two thigh/drum bones and froze the rest)
Leftover roasted veggies chopped
Leftover gravy
Leftover pumpkin soup
Roasted turkey liver chopped
Roasted bacon chopped
Shredded leftover turkey meat - add this a few minutes before eating so that the meat doesn't dry up.
Boil it all together...simmer for an hour. Maybe throw in a bay leaf or two. And an onion if it wasn't included in the leftover roast veggies.
Now one meal eat it with pasta as a turkey noodle soup.
Another meal you can re-boil with mushrooms, kale and leftover rice as a hearty soup.
So good....that I keep eating it up before remembering to take a picture.

Hearty Turkey soup
It's getting colder and colder out there. Time for all the soup and stew recipes to come out! Here's an experiment that turned out pretty yummy: Turkey soup
Turkey carcas from whatever festive dinner you had
Turkey meat (I prefer the leftover dark meat)
Butternut squash (leftovers as well)
Tomatoes
Carrots
Celery
Onion
Quinoa
Garlic
Dried herbs (Thyme, Basil, Oregano in my case)
Threw everything into a big pot in the afternoon....3 hrs of simmering later....yummy goodness that feels like a warm blankie. Enjoy!

Turkey Grilled Cheese
Did I mention grilled cheese sandwiches were my latest love? It was turkey season and I was looking for yummy ways to incorporate the bird leftovers into various meals other than the staple turkey soup. I saw the bread and cheese....and the turkey....and **lightbulb**!
Bread
Turkey
Hot pepper jelly
Frulani Cheese
Butter
So yum!
