Trout on Toast

This could be a new favorite snack...if I make trout more often. I had baked steelhead trout and leftover trout straight up is always a little too fishy tasting to be enjoyed. So I added a dollop of  Miracle Whip, smashed it up and put it on toast with some herb & garlic cream cheese. REALLY YUMMY. Well...til the next time I make trout I guess.

Not my favorite snack and other news




Someone brought a fantastically high-caloried cheesey spinach dip to a potluck recently. I took a small plate of it home afterwards. And then one afternoon when I was craving an unhealthy snack, I thought of mixing two of my favorite things together: Cheesey spinach dip with green onion pancake.

And well...while it wasn't horrible...we'll just say that it's best enjoyed separately. =) Lesson learned. So if you ever find yourself with this same craving...you'll have some idea what to expect.

Oh yes...I promised to share why I disappeared for a while. It's nothing spectacular...or maybe it is...but we're expecting! And in that first trimester where I disappeared, I basically couldn't stand the smell of food...cooked or raw. I didn't cook if I didn't have to. I held my breath whenever I walked into the kitchen...or breathed through my mouth so I wouldn't smell anything. I would brace myself whenever I opened the fridge too. Ugh. So yes, no experimenting with foods for me. But the second trimester is going MUCH better so I'll try to get more taste combos up. I'm thinking by the third trimester I'll be feeling/looking like a beached whale and may not be able to operate safely in the kitchen so I'll try to make the most of the next couple months! Toast Two Ways



Sorry for being MIA for a bit....I was on vacay in Sonoma valley...enjoying 30C weather and drinking lovely wines. =)

But here is what breakfast can often look like for me. One or the other....or BOTH.

There's avocado on toast, with sugar sprinkled over top.
And/or an egg fried over easy with ketchup.

It's quick and yummy. And semi-healthy. ;)

Bacon grilled cheese

This is one of those indulgent snacks that I will only allow myself once a year. Or so I say right now. We had defrosted a pack of bacon for some holiday cooking and had a few strips leftover that we couldn't re-freeze....so it went into a grilled cheese!

Bacon
Squirrely bread
Smoked Gouda
White cheddar
Cranberry sauce
Butter



It was DELISH!!


The cranberry sauce added a really nice touch of sweetness and tartness that cuts through the richness of all the cheese. Bacon...bacon speaks for itself.

Guacamole


This is a favorite snack of mine: GUACAMOLE! Goes with chips, sesame crackers, rice crackers, lentil chips...anything crunchy really. (Sorry the camera focus wasn't quite right.) While avocados have higher calory counts, it's got some very good benefits for your body. I also like to use a fork and spoon to do the mashing together instead of a blender. This way I get a nice chunky texture that tells me I'm eating the real thing instead of some processed and powdered mix.

Avocados
Lime juice
Salt & Pepper
------------------These first three ingredients is my basic go-to recipe for a quick guac fix

Garlic (one clove minced is enough punch)
Cilantro

I LOVE this stuff!! Ymm!

Turkey Grilled Cheese



Did I mention grilled cheese sandwiches were my latest love? It was turkey season and I was looking for yummy ways to incorporate the bird leftovers into various meals other than the staple turkey soup. I saw the bread and cheese....and the turkey....and **lightbulb**!

Avocado Grilled cheese




I recently rekindled my love of a good grilled cheese sandwish. Alas I'm not supposed to eat very much cheese as it's usually quite high iodized salt content. But once in a while, I indulge. 

This one is made of:
Squirrely bread (all sprouted seeds so low/no gluten)
Frulani cheese
Avocado

It would've greatly benefited from having some crispy bacon in it. But good nevertheless. =)

East Meets West Snack

Check out this green onion pancake quesadilla!!


I had the pre-made, frozen green onion pancakes you can find at most Asian groceries. They're pretty darn good on their own. But I had some cheese in the fridge...so I looked at the pancake, looked at the cheese, and thought "Why not?"

I browned each pancake separately before adding the cheese and re-browning the whole thing. So yum!

PB, N & B

Hmm...crappy quality photo...sorry about that. This is another one of my favorite go to snacks: Banana on peanut butter or nutella (or both!)

And if you want to amp up the sugar content, which I do once in a while, then drizzle condensed milk on top. The salty/sweet/crunchy/soft tastes and textures goes together oh-so-nicely in your mouth. Yum!

Avocado I Love You!

I love eating avocado. One of my favorite snacks is avocado on toast with sugar sprinkled on top.
Simple. Delicious.

Aparently toast with avocado and condensed milk is also very good. But it takes a little longer to nicely drizzle the condensed milk than to sprinkle sugar. And then you'll have this extra spoon to wash after.

Yes I'm lazy all about efficiency.
