I'm back!! It's been rather eventful....I became a Mom at the end of April! A beautiful and amazing experience...that is ongoing. Even through the endless diaper changes. My parents were with me for the first month and a bit for the first bit of the Chinese confinement period. And then my husband's parents were with us for the rest of the 100 days of rest, renourishment and replenishment of the body. So, I haven't cooked much. But....we're on our own as a family now and it's back to feeding ourselves. A slight challenge when you have to work around 3 hr feeding/nap schedules. I need quick and easy meals...so a quick starter is my favorite Brussels Sprouts recipe with an addition: bacon!

Cold Noodle Salad
This is perfect for a summer meal. And it can cover nearly all the food groups at once.
Zucchini cut into thin strands
Boiled eggs
Tomatoes
Cooked, cooled Asian noodles
Turkey bacon
Chopped green onion
Dash of chili flakes
Goddess Dressing (from Trader Joes)

Bacon grilled cheese
This is one of those indulgent snacks that I will only allow myself once a year. Or so I say right now. We had defrosted a pack of bacon for some holiday cooking and had a few strips leftover that we couldn't re-freeze....so it went into a grilled cheese!
Bacon
Squirrely bread
Smoked Gouda
White cheddar
Cranberry sauce
Butter

It was DELISH!!

The cranberry sauce added a really nice touch of sweetness and tartness that cuts through the richness of all the cheese. Bacon...bacon speaks for itself.
