Leftover Makeover : Indian Sauces

I love a good Indian meal. Their curries and sauces are so rich in flavors. It's also chocked full of so many herbs and spices that makes it hard for me to replicate at home without needing a separate spice cupboard. It's also why Indian food is pricy...those spices add up!

That said, I hate seeing good sauce wasted. Recently I had a butter chicken and goat curry. I had the leftover sauce packed and then I re-used it for a Vegetarian Vednesday meal (I know, it's meat based sauce but still...). Totally yummy!


Top left is butter chicken sauce with firm tofu.
Bottom right is goat curry sauce with peas.
All served with quinoa rice mix.

Warm Corn Salsa


This makes a fantastic side dish....I can't wait until BBQ season because it would totally go well with smoky ribs and chicken and steaks.

Corn
Peas
Plum Tomatoes
Onion
Lime Juice
Salt
Pepper

The lime juice really brings out all the flavors....LOVE it!

Tri-Colour Linguine

It was Vegetarian Vednesday and I just had scrapings in the fridge....but I managed to pull this colourful number together and you know, it was actually pretty tasty! The "tri-color" refers to the squash, corn and peas....not the linguine itself.

Onion
Leftover squash pieces
Frozen Corn niblets
Frozen Peas
Basil
Oregano
Cumin

I just used pasta water to make the "sauce"...it's really just seasoned with the herbs and some S&P. Glad to find out that a vegetarian meal can be pretty easy to put together. =)
