Yam Latkes and Egg with Tomato Salad




Sorry the lighting wasn't very good on this one. I saw something about sweet potato latkes in a magazine somewhere so I thought I'd give it a try. SUPER DELICIOUS...especially with a fried egg on top and when the yolk oozes over the crispy yam latke!!

Latke:
Shredded yellow yam
Eggs
Flour
Cumin
Paprika
Curry powder

Tomato Salad:
Regular tomatoes on the vine
Some kind of darker heirloom tomatoes
Yellow bell pepper
Olive oil
Balsamic vinegar
Dried herbs
S&P to taste

Butternut Squash Soup & Kale Chicken Hash


I've always wanted to try making my own butternut squash soup. So, I bought one, baked it in the oven for 45min and then used half of it to make this soup.

Butternut squash
Onion
Curry Powder
Chicken Stock

I made the chicken stock with the carcas of a Costco BBQ chicken. Meanwhile I took its breastmeat and sauteed it with kale and some leftover potato hash. Everything went together...great comfort food! So great in fact, I just put the kale chicken hash straight into the butternut soup:



So now it's a hearty kale chicken butternut squash soup!

Both were really delicious...and will surely be made again. =)

Honey curried chicken nuggets on israeli couscous


This summer I came across a friend's post on honey bbq'd chicken wings with a hint of curry. "What an interesting combination of flavors!" I thought. I didn't have all the ingredients but what stood out for me was to have honey and curry. So I threw it together. And have made several variations on it since. It was always with wings...but this time, I had boneless skinless thighs. Why not use the same flavors right?

Marinade:
Soy Sauce
Curry Powder
Cumin
Paprika

I pan seared them...then drizzled Date Honey on top.

The Israeli couscous side was neat too. I saw it at Trader Joe's and thought to give it a try. I put some rice seasoning that I actually bought in Jerusalem into the couscous. Can't say I really knew what to do with the rice seasoning because though there was a spice scent, the taste wasn't very pronounced. I must be missing some additional seasoning...anyone know?

Golden Pompano

The Pompano is a cousin of the pihrana I believe...and it's an easy fish to cook. For starters, it doesn't have any scales. Its bones are few and easy to remove. The meat is medium firm and quite tasty....and you can fry, steam, bake, grill it however you like.

There are many ways to season and cook this fish. My current favorite is to rub a curry powder mix onto it (as well as inside the cleaned belly). Then I pan fry it until I can easily push a fork through the whole fish. Add some fresh chopped cilantro and squeeze some lime over it as you eat. Yumz!!

Ingredients:
Curry powder mix (tumeric, chili powder, masala, ground coriander, ground fennel seeds, ginger powder....whatever is in your cupboard)
Cilantro
Lime

Wings!

I <3 chicken wings. Big time. I could never turn down an offer of wings. There's so many ways and recipes to marinate them and it just so happens I also love trying out different flavors. An easy way to prepare wings is to marinate them in a baggie then freeze it. When you want to use it, just defrost and cook...it's perfect whether you pan fry, BBQ, bake or smoke it.


I bought a big package of wings from Costco yesterday. After roughly dividing them into three bags, I prepared the marinades. They are (from left bag to right):

Left:
The Quick BBQ Marinade

Center:
Curry/Garam Masala mix
Cumin
Paprika
Sugar
Salt

Right:
Date honey
Soy Sauce (light and dark)
Garlic
Sesame Oil

Can't wait to eat these!
