Crustless Quiche

I was too lazy to make a crust...so I made one of my regular quiches in a cast iron pan, then put the whole thing in the oven to bake. Lovely.

Kale
Mushrooms
Onion
Cheese
Eggs
Almond Milk (remember it's 3 eggs to 1 cup milk)
Cumin
Paprika
Salt/Pepper



One of the best parts was that I did the whole thing in the same pan from start to finish. A couple less dishes to wash. =)

Mushroom Onion Quiche




Meatless Monday was upon me and I decided a quiche was in order...it's been a while. Well there wasn't a whole lot in the fridge to work with so a simple quiche it is.

Mushrooms
Onion
Paprika
Basil
Oregano
Eggs
Almond milk

Remember, it's three eggs to one cup of milk for the filling. And the easiest pie crust recipe is this: 1 cup flour, 1/2 tsp salt, 1/4 cup ice cold water, 1/4 cup olive oil. The trick is to beat the cold water and olive oil together until it thickens, then mix it into the flour/salt.

My only regret, I didn't have any cheese in the house. But the quiche was delicious anyways. =)

Salmon Onion Quiche & Spaghetti Squash Salad




Meatless Monday! Well, we do have salmon in it, but that still counts as vegetarian right? Kind of? I was trying to use up leftovers and quiches are great to put them in.

Quiche:
Salmon
Onion
Leftover yellow zucchini
Eggs
Almond Milk

Crust:
Flour
Water
Olive Oil

Salad:
Spaghetti Squash
Tomatoes
Leftover yellow zucchini
Basil
Balsamic Vinegar
Olive Oil
Salt and Pepper

Salmon & Swiss Chard Quiche...again




Tired of seeing quiche yet? I made the Salmon Swiss Chard quiche again...this time in a proper pie dish...and this time, took a picture before we dug into it. We used leftover baked salmon instead of canned and the Swiss Chard was from the farmers' market. Super yummy per usual. =)

Veggie Quiche & Broccoli Salad





The Salmon & Swiss Chard quiche turned out so well I wanted to try again. This time with tomatoes replacing the salmon. A true Meatless Monday meal. Oh wait....I have eggs...

Quiche filling:
Onion
Swiss Chard
Tomatoes
Marble Cheese
Eggs
Almond Milk
S&P

I think I failed to mention last time that the eggs:milk ratio is 3 eggs: 1 cup of milk. I think the almond milk gives it an extra layer of depth in flavor....the magic for aromatic, fluffy goodness!

Broccoli salad:
Broccoli
Raisins
Pumpkin Seeds
Flax Seeds
Cilantro

Dressing:
Mayo
Mustard
Vinegar
Sugar

Salmon & Swiss Chard Quiche



Yep...I was so hungry I dug into the dish before taking a photo of it. Pardon the gaping hole in the quiche! I bought some Swiss Chard in my goal to eat more cruciferous vegetables...which are full of super food qualities...but also inhibits thyroid function if large quantities are consummed. (Eat lots if you're hyperthyroid; eat lots of iodine-rich foods in addition to these healthy veggies if you're hypothyroid.)

While browsing for Swiss Chard cooking inspiration I came across this quiche recipe. I had some minor modifications....but it was delicious! I ate 1/3 of the quiche.

Salmon (canned)
Swiss Chard
Almond Milk
Onion
Egg
Marble Cheese (I would've wanted feta instead)
S&P

I also found this fantastic quiche crust recipe:

Flour
Salt
Water
Olive Oil

I didn't have a pie dish so I used a casserole dish...which took 20 minutes longer to bake because it was thicker. But the end result...surprisingly yummy. Quiche is also easier to make than I thought! I now have a new place for leftovers to go for a meal transformation.
