Mango Salsa Avocado'n Egg on Toast

I had this for breakfast a couple times....so yummy. With gestational diabetes I have to strictly monitor my carb and sugar intake. Bagels are pure sugar...and cereals...you may as well just be eating straight from the sugar jar. Needless to say I've been craving a bowl of Frosted Flakes for a while....I miss sugar. Anyways...for breakfast, I'm allowed one slice of toast. I use sprouted grain bread because it's much lower in glycemic index than regular fluffy bread. 

Bread
Avocado (1/2)
Pan fried egg
Mango Salsa (from Costco)

Really really tasty. 
Also really tasty is just avocado with mango salsa on toast. (I also discovered that eating corn products keeps my blood sugar levels too high for too long. So no corn chips for me.)

Christmas Steak



And just like that, Christmas is upon us! This isn't Christmas dinner, but it's close.

Boneless rib steak:
Montreal Steak Spice
Chopped cilantro
Olive Oil

Mushrooms:
Garlic
Paprika
Cumin
S&P

Salad:
Baby Kale
Chick Peas
Pomegranate
Avocado

Dressing:
Tahini
Grainy Mustard
Maple Syrup
Lime juice

Everything was delicious. The steak was eaten with a wedge of lime for a nice citrus note. And, the vitamin C from the lime helps your body absorb the iron better from the red meat. Just FYI.

Leftover Makeover : Bean Patty



Remember the nine bean patty? I decided I would throw it into a salad. It's flavorful and good protein. So...there it went. And the Salad was a very good one because of it.

Bean patty
Fresh mozzarella
Avocado (half)
Walnuts

Dressing: Honey Dijon Summer dressing...minus the garlic this time

Toast Two Ways



Sorry for being MIA for a bit....I was on vacay in Sonoma valley...enjoying 30C weather and drinking lovely wines. =)

But here is what breakfast can often look like for me. One or the other....or BOTH.

There's avocado on toast, with sugar sprinkled over top.
And/or an egg fried over easy with ketchup.

It's quick and yummy. And semi-healthy. ;)

Guacamole


This is a favorite snack of mine: GUACAMOLE! Goes with chips, sesame crackers, rice crackers, lentil chips...anything crunchy really. (Sorry the camera focus wasn't quite right.) While avocados have higher calory counts, it's got some very good benefits for your body. I also like to use a fork and spoon to do the mashing together instead of a blender. This way I get a nice chunky texture that tells me I'm eating the real thing instead of some processed and powdered mix.

Avocados
Lime juice
Salt & Pepper
------------------These first three ingredients is my basic go-to recipe for a quick guac fix

Garlic (one clove minced is enough punch)
Cilantro

I LOVE this stuff!! Ymm!

Avocado Grilled cheese




I recently rekindled my love of a good grilled cheese sandwish. Alas I'm not supposed to eat very much cheese as it's usually quite high iodized salt content. But once in a while, I indulge. 

This one is made of:
Squirrely bread (all sprouted seeds so low/no gluten)
Frulani cheese
Avocado

It would've greatly benefited from having some crispy bacon in it. But good nevertheless. =)

Avocado I Love You!

I love eating avocado. One of my favorite snacks is avocado on toast with sugar sprinkled on top.
Simple. Delicious.

Aparently toast with avocado and condensed milk is also very good. But it takes a little longer to nicely drizzle the condensed milk than to sprinkle sugar. And then you'll have this extra spoon to wash after.

Yes I'm lazy all about efficiency.
